One of my favourite things to do in summer is to whip out my platters & host a braai* for family & friends!
The typical South African summer is hot enough, so I don’t want to spend the whole day slaving away in front of a stove.
Instead, I try to plate a range of {easy peasy} canapés, healthy salads, artisan breads, good deli products, a glass of ice cold wine & some good company!
One of my all time favourites, must be this:
Mediterranean | Prosciutto & Melon Skewer
Ingredients:
8 slices Prosciutto
1 Melon
1 Small Punnet Rocket
6 Mozzarrella Sticks
Soefija’s Olive Oil
Soefija’s Balsamic Vinegar
Pure Honey
Bamboo Skewers
Method:
1. Cut the melon in half – take out pips & scoop out small melon balls.
2. Cut prosciutto slices in 4 pieces – you should have at least 32 smaller pieces of meat.
3. Cut mozzarella stick into 5 discs – you should have 30 discs in total.
4. Assemble the skewer
a) Melon
b) Prosciutto
c) Mozzarella
d) Rocket Leaf
5. To make the glaze
Balsamic Vinegar | Honey | Olive Oil
Combine the balsamic, honey & a dash of olive oil
(it should have the consistency of golden syrup)
